Sole
Dover sole (S. solea) is a saltwater flatfish found primarily on the coast of the northern Atlantic Ocean. It is a dark brown with a white underbelly and typically grows to around 2 feet in length. Like its cousins the flounder and halibut, it starts out with both eyes on the same side of its body, then the left eye migrates to the right side as it adapts to living on the sea floor. Sole meat is white and has a mild, buttery taste to it. Our sole are sold as fresh fillets. Call for availability.
