Sheepshead
Sheepshead (A. probatocephalus) is a saltwater fish native to the Gulf of Mexico. It is often called the convict fish due to its black and white stripes resembling a prison uniform. It is most notable for its human-like teeth which it uses to eat clams and small crustaceans. Sheepshead meat is bright pink and has a sweet flavor that is reminiscent of shellfish, probably due to its diet. Our sheepshead are caught locally in the gulf and sold fresh whole or as fillets.
