Flounder (Paralichthys sp.) is a family of saltwater fish in northern coastal U.S. waters. They are characterized by their abnormally flat bodies and pair of eyes both being on the same side of their heads. However they are only like this as adults, as juvenile flounder possess one eye on each side. As they mature, one eye migrates to the other side of their head as they become more accustomed to living on the bottom of the sea. Flounder fillets are typically white, and each individual fish yields four fillets instead of the typical two. The taste is mild and the texture has a mild flake to it. Our fresh flounder are wild caught and sold as whole fish or fillets. Our frozen flounder are caught in Panama, Nicaragua, and Indonesia, available whole or in fillets or pocket cuts.
