Escolar, (L. flavobrunneum) also known as walu or butterfish, is a species of snake mackerel found in deep water. It is characterized by its often dark color. Escolar is extremely high in oil content, almost to a detriment as it is not recommended to eat a large amount of this fish, due to its natural laxative properties. It is worth it to be enjoyed in small quantities, as it has the taste of a fatty tuna. Its fillet is white and is sometimes mislabeled as "white tuna."
