Dungeness Crab
Dungeness crab (M. magister) is a species of cold-water crab native to the northwestern U.S. Their purple-hued shell distinguishes them from other cold-water crabs. Crabs are caught in baited metal pots and must be at least 6.25 inches across its carapace to be kept. Most mature Dungeness crabs are around 7 inches. Due to having multiple seasons, Dungeness crabs are available year-round. They are renowned for their sweet taste and high fat content, enhancing their texture.
