Crawfish
Crawfish (P. clarkii) are freshwater crustaceans found throughout the southern U.S. Their appearance is similar to that of a lobster but smaller in size. Crawfish live in burrows that they construct out of mod, which leads to them preferring swampy terrain. They are a staple food in Louisiana, with crawfish boils being hosted all throughout the spring, when they are in season. Crawfish farming is done by growing rice or a similar plant in shallow water, creating an artificial marsh. When the crawfish have reached maturity in these marsh fields, the water is drained and the crawfish are harvested. Our fresh crawfish are a mix of wild and farmed locally. They can be bought live or as meat. Our frozen crawfish are also a mix of farmed and wild, coming from China. These crawfish can be bought pre-boiled, whole, as meat, or just heads.
