Corvina (C. gilberti) is a drum species  characterized by its silver body and yellowish fins. It is found in the warm waters of the South American coast. Corvina fillets are pink and turn white when cooked. They are mild and sweet with a flaky texture. Corvina is a popular fish for ceviche. Our corvina are wild caught from Costa Rica, sold fresh as fillets or whole. Call for availability.
