Branzino
Branzino, (D. labrax) also known as European sea bass, is a saltwater whitefish found off the western coast of Europe and Africa. It is small but thin with a silvery color. The fillet is similar to other sea bass, in that it is white and mild, with a similar taste to halibut. It is commonly used in Italian cuisine where it is cooked whole, but can still be served as a fillet. Our branzino are farm-raised in Spain and are sold whole and fresh or frozen as fillets.
