Bluenose, (H. antarctica) also known as Antarctic sea bass or blue-eye trevalla, is a deep-sea saltwater fish found off the coast of New Zealand. It is dark blue in color with a characteristic blunt snout. Its fillet is white and firm, which makes it highly sought-after. They are caught wild on long lines. Our bluenose are sold as fresh fillets. Call for availability.
