Striped Bass
Striped bass (M. Saxatilis) is a freshwater fish found amongst the rivers in the southeast US. Like its name implies, it is characterized by the dark stripes running from its gills to tail. They are green with a white underside. Its fillet is pink in color and flaky when cooked. The flavor is naturally sweet and salty, so not much seasoning is needed to prepare it well. Our stripers are wild caught and sold fresh as fillets or whole. Call for availability.
