Amberjack (Seriola dumerili) is a saltwater fish found in the tropical regions throughout the Atlantic and Pacific oceans. It is characterized by yellow fins and stripe that runs from its head to tail. Amberjack fillets are lean and a pale pink in color. This results in a mild taste and is thus commonly grilled or used in sushi. Our amberjack are wild caught and sourced reliably from saltwater fishermen.
