Yellowfin Tuna
Yellowfin tuna, (T. albacares) also known as ahi, is a species of saltwater migratory fish found throughout the oceans. They are characterized by their yellow fins and yellow stripe running from its head to its tail. This stripe separates the dark blue back from the silver underbelly. Yellowfin tuna is great for sushi and sashimi, as high-grade tuna is unmatched when eaten raw. Yellowfin tuna meat is bright red, and comes in a grading system similar to bluefin, ranging from 1 to 3. We carry grades 1 and 2, with subcategories such as 1+ and 2+. This grading is based on color and fat content, with the brighter color and higher fat content being a higher grade. Our yellowfin tuna are sold fresh whole, headed and gutted, or as loins or steaks.
