Chilean sea bass, (D. eleginoides) also known as the Patagonian toothfish, is a saltwater fish native to the lower tip of South America. These fish possess an elongated body with a pronounced underbite. Chilean sea bass are mostly black in color. Chilean sea bass fillets are a bright white in color and mild, delicate taste with a soft, buttery texture.
