Gar
Gar (A. spatula) is a large freshwater fish native to the U.S. They are considered "living fossils" as they are very similar to their ancestors when compared to most other fish. Gar are long (up to 10 feet) with a flat snout and two rows of teeth. Gar fillets are long and range from light pink to white. It is relatively unpopular but some in southern Louisiana like to cook them as garfish balls. Gar are only available as a special order.
