Bluefin tuna is commonly used in sushi and sashimi, as the fresh taste of a raw high-grade tuna is unmatched. Bluefin tuna, like yellowfin, comes in grades. We sell grades 1 and 2, which can be broken down into subcategories such as 1+ and 2+.  We sell bluefin tuna fresh as loins.
